1 ripe banana, cut into small pieces
1 cup unsweetened fruit, cut into small pieces (peaches, strawberries, raspberries, etc.)
1/2 cup crushed pineapple, drained
1 cup plain yogurt
In a large bowl, whisk honey into orange juice. Add banana, fruit choice, pinapple and yogurt. Srarting out slow, beat until creamy. Pour into freezer safe pan and freeze.

1 cup mayonnaise or salad dressing
1/4 cup sour cream
2 cloves garlic, mashed
2 tablespoons, minced basil
1/4 cup finely minced red bell pepper
Salt and pepper to taste
Possible add-ins; black olives, ham,
Cook pasta; set aside to cool. Combine mayo, garlic, basil, peppers and sour cream; stir in pasta. Refrigerate. Best if made ahead. This recipe serves about 6.

This quick and easy traditional sauce gives regular hot dog an "out of this world" flavor!
2 chopped onions
1 teaspoon butter
1 teaspoon shortening
1 1/2 lbs hamburger
1/2 teaspoon garlic
Salt & Pepper to taste
2 teaspoons chili powder
1 teaspoon mustard
6 ounce can tomato sauce
4-5 ground hot dogs

4 large baking potatoes, baked at 350 until tender
(batter)
2 eggs
1 cup ice water
1 cup all purpose flour
Cut baked potatoes in half and scoop out most of the *flesh leaving a this layer of the skins. Now cut in half again.
Make batter by combining eggs ice water in a bowl. Sift flour over all & mix briefly - batter should be a little lumpy. Drop potato skins into batter. Pull each one out and let some of excess drip off. Place immediately into deep fryer with vegetable oil pre-heated to 375 degrees. Fry til golden brown. When cooked to your liking, place upside down on a sheet of foil covering a cookie sheet and keep warm in oven. Make sauces.
*keep scooped out flesh and use for another dish.

Butter
Fresh bread crumbs
Freshly grated Parmesan
Chopped fresh parsley
Prepare stuffing mixture and set aside. Saute mushroom caps in butter until soft. Allow to cool slightly. Fill caps with cheese stuffing mixture. Sprinkle with a topping of half bread crumbs and half grated Parmesan. Bake at 400 degrees until hot and golden brown. Garnish with fresh parsley.

Stems from 2 lbs. mushrooms
Butter
Chablis

1 t. garlic powder

1 onion, thinly sliced
Juice of 1/2 fresh lime
9 garlic cloves, peeled
Coarse ground pepper to taste
1/4 c. balsamic vinegar
2 T. your favorite hot sauce
2 T. Spice Hunter ground ginger
3 T. Spice Hunter dried oregano
3 T. Worcestershire Sauce
1/2 c. red wine
1 T. Spice Hunter coriander
2 T. Spice Hunter dried tarragon
2 T. prepared mustard
3 T. maple syrup
Choose a roasting pan that will fit the roast snugly. Cover bottom of pan with rings of sliced onion; place roast on onion rings. Pour lime juice over meat. Insert garlic cloves into slits cut into top of roast.
In a separate bowl whisk all remaining ingredients except pepper and pour over meat. Cover the roast with a generous sprinkling of pepper. Cover the pan and bake at 275 degrees for up to 6 hours; turn roast over after half of cooking time. Meat is done when it shreds with a fork! Leftovers make great shredded beef tacos.

1/3 cup cranberry juice cocktail
1 (14 oz.) can beef broth
3 T. soy sauce
1/8 t. garlic powder
1/8 t. ginger
Cornstarch
Cut beef into bite-sized pieces. Brown all sides in oil in 10-inch skillet. Add cranberry juice, broth, soy sauce, garlic powder and ginger. Simmer for 1-1/2 hours or until tender. Blend a small amount of cornstarch with a small amount of water and stir into beef. Cook until thickened, stirring constantly.

2 jars (6oz each) marinated artichoke hearts (reserve marinade)
Trim beans and boil until just tender; drain, plunge into cold water and drain again. Place beans in large salad bowl and add remaining ingredients plus dressing. Cover and refrigerate at least 8 hours before serving, tossing occasionally.
Lemon-Herb Dressing
Reserved artichoke marinade
1 T. chopped fresh basil
1/2 t. chopped fresh oregano
1/2 t. grated lemon peel
2 t. lemon juice
1/2 t. garlic salt
Pepper to taste
Blend all dressing ingredients together and pour over prepared veggies. This fridge mix will store for up to 2 weeks. Mix it into cooked pasta, serve with grilled or barbecued meats or, just eat it right out of the bowl!

1 T. chopped fresh parsley
Scoop center of tomato out into a large bowl; combine with beef, onion, salt and pepper. Cut remaining tomato into this strips and reserve. Shape meat mixture into 6 patties about 3/4 inch thick. Brown on both sides in oil; remove patties to hot platter. Pour off drippings if necessary and stir sour cream, tomato strips, dill seed (can also us celery seed or caraway seeds if preferred) and salt into pan; Cook just until heated thoroughly and spoon over patties. Sprinkle with parsley.

4 large baking potatoes, baked at 350 degrees until tender.
(batter)
2 eggs
1 cup ice water
1 cup all purpose flour
Cut baked potatoes in half and scoop out most of the *flesh leaving a thin layer on the skins. Now cut in half again.
Make batter by combining eggs and ice water in a bowl. Sift flour over all and mix briefly- batter should be a little lumpy. Drop potato skins into batter. Pull each one out and let some of excess drip off. Place immediately into deep fryer with vegetable oil pre-heated to 375 degrees. Fry til golden brown. When cooked to your liking, place upside down on a sheet of foil covering a cookie sheet and keep warm in oven. Make sauces.

2 T. dried Thyme, divided
1 t. salt
1 t. pepper
5 eggs
2 cups of saltine cracker crumbs
Vegetable oil
Trim stem ends of onions and peel leaving root end intact. Slice onions to to root crosswise into 12 equal sections. Bring large pot of water to boil. Add prepared onions for 1 minute and transfer to bowl of ice water. Refrigerate 1 hour to open onion into "flower". Drain on rack cut side down.
Combine flour, 1 T. thyme, salt and pepper in large plastic bag. Place onions, one at a time, into bag and shake to coat. In bowl, beat eggs. Dip coated onion into eggs coating thoroughly. Combine cracker crumbs and remaining thyme. Place onion in crumbs; sprinkle crumbs over top until coated.
Deep fry at 350 degrees until crisp and golden; about 6 minutes each. Drain on paper towel and serve with sauce of your choice.

2 T. butter
Salt and Pepper to taste
Trim fat from chops. I like to use butterfly chops when they're on sale! Pour orange juice into small bowl, press garlic into juice then add onions, ginger and a pinch of pepper; stir well. Place chops in shallow dish and cover with marinade. Let stand for at least 45 minutes.
Melt butter in skillet, remove chops from marinade and brown chops on both sides. Pour marinade back into the skillet and cook covered for about 10 minutes. Remove cover and cook until fork tender. Add more salt and pepper to taste and serve.

1/2 cup fresh lime juice
1 tablespoon grated lime zest
1 teaspoon vanilla extract
Preheat of to 350 degrees
In a food processor, combine 2-1/4 cups of the flour, powdered sugar, butter, cream cheese and almond extract. Pulse until mixture is crumbly but holds together when squeezed. Transfer dough to a 9x13" baking dish; press evenly into bottom and 1/2 inch up the sides. Bake 20 to 25 minutes, until lightly browned. Transfer to wire rack; cool 10 minutes.
In large bowl, whisk together eggs, sugar, lime juice, lime zest, vanilla and the remaining 1/4 cup of flour. Pour over baked crust and return to oven for 20-25 minutes (until center is set). 1 tsp. salt
dash of pepper
1/4 cup melted butter

Spaghetti Basilico

A versatile side dish that makes a delicious compliment for steak, barbecued chicken or sauteed shrimp.
1 (1Lb.) package spaghetti
1 stick butter
1 large clove garlic, crushed
2 T. dried sweet basil
1 T. dried parsley flakes
1/2 t. salt
Pepper to taste
2 oz. fresh Parmesan Cheese, grated
Boil pasta in slated water until done per package instructions. While pasta is cooking make sauce.
In large pan, melt butter over medium heat, add garlic and cook until transparent...about 1-2 minutes. Stir in basil and parsley; remove from heat.
Drain pasta and add salt, pepper and Parmesan Cheese; blend in seasoned butter mixture stirring well.
Serves 4-6

1/2 cup teriyaki sauce
1/4 cup packed brown sugar
3 cloves garlic, minced
1 t. grated orange peel
1/2 t. crushed red pepper
2 lb. beef top round roast (1-inch thick)
1/4 cup sliced green onions
Shake flour in oven bag, place in 13x9 baking dish. Add orange juice, teriyaki sauce, brown sugar, garlic, orange peel, and crushed red pepper to oven bag; close and squeeze bag to blend flour. Add roast to bag. Turn bag to coat beef with sauce. Close bag with tie and marinate in refrigerator for 1 1/2-2 hours.
Preheat oven to 325 degrees. Cut 4-6 slits into to of bag and bake 35-45 minutes or until meat thermometer reads 145. To serve, thinly slice beef and pour sauce on top then sprinkle with chopped green onions. This sauce is so delicious and can be used on or with all meats and fish or even as a dipping sauce for wontons.

1/3 cup minced Onion
1/5 cup Milk
1 Egg
1 T. snipped Parsley
1 t. Salt

1/2 t. Worcestershire Sauce
1/4 cup Shortening
1 bottle Chili Sauce (12.oz)
1 jar Grape Jelly (10 oz.)
In large bowl, mix ground beef, bread crumbs, onion, milk, egg, parsley, salt, pepper
and Worcestershire sauce together. Shape into 1-inch balls. Melt shortening in large skillet and brown meatballs over medium-high heat. Remove meatballs from skillet and pour off fat.
Heat chili sauce and jelly in skillet, stirring until jelly is melted. Add meatballs and stir until thoroughly coated. Simmer uncovered for 30 minutes or until meatballs are thoroughly done.

1/8 t. Ground Black Pepper

1/2 cup pitted Black Olives, halved
1 T. chopped fresh chives
1 can Tomato Sauce (3 oz.)
1/2 cup Vegetable Oil
1/4 cup White Wine Vinegar
1 t. salt
1/4 t. Garlic Powder
1 t. Oregano
1/8 t. Ground Black Pepper
Combine lettuce, meat, cheese, tomato, olives, and chives in large bowl. Wisk together all remaining ingredients for dressing. Pour over salad, toss to coat and serve.

Party Potato Salad

6 cups cooked and cubed red potatoes
1 1/2 cup shredded Cheddar
2/3 cup black beans, rinsed and drained
2/3 cup chopped red bell pepper
1/2 cup thinly sliced celery
1/3 cup thinly sliced green onions
1-2 T. minced fresh cilantro or parsley
3/4 cup Ranch salad dressing
1/2 cup chunky salsa
1/2 t. salt
In large bowl, combine potatoes, cheese, beans, red pepper, celery, onion and cilantro. In small bowl, combine salad dressing, salsa and salt; pour over potato mixture and toss to coat. Cover and refrigerate at least 1 hour. Makes 12 servings

Sweet Potato Rolls

Pre-heat oven to 450 degrees
3/4 cups mashed sweet potatoes
1/2 cup melted butter
1/2 cup milk
1 1/2 cup flour
1 teaspoon pumpkin pie spice
1 tablespoon baking powder
1/2 teaspoon salt
Combine first 3 ingredients in large bowl. Sift flour, pumpkin pie spice, baking powder and salt together and add to sweet potato mixture, blending well. Roll dough 1/2 inch thick on floured surface; cut with 2 inch biscuit cutter . Place on lightly greased baking sheet. Sprinkle with Cinnamon Sugar if desired. Bake on top rack for 12 to 15 minutes or until brown. Delicious with Pecan Honey Butter!
