Ham and Cheese Muffins

2 cups self-rising flour
1 cup milk
1/2 cup finely chopped ham
1/2 t. baking soda
1/2 cup mayonnaise
1/2 cup shredded Cheddar
Combine flour and soda in large bowl. Combine remaining ingredients in separate bowl; pouring into flour mixture until just moistened. Fill grease muffin cups 2/3 full. Bake at 425 degrees for 16-20 minutes.
Beautiful served warm and slathered with butter or as a mini lunch-open-faced & topped with cream cheese or spicy mustard. Yum!

Lemon Crunch

1/2 cup sugar
2 1/2 T. cornstarch
1/4t. salt
1 1/3 cup milk
1/2 t. vanilla
1 egg beaten
1/2 cup fresh lemon juice
1/2 t. zested lemon peel
1 T. butter
In medium saucepan, combine sugar, cornstarch and salt. Stir in milk and cook until thick, stirring constantly. In medium bowl, whisk egg in lemon juice together. Stir in a little of the thickened mixture into the egg/lemon juice bowl to temper, then pour everything back into the pan mixing as you go. Cook and stir over low heat for 2 minutes-add lemon peel, butter and vanilla. Pour into coconut crust:
1 1/4 cup shredded coconut
3/4 cup fine graham cracker crumbs
1/2 cup each sugar and flour
1 stick of unsalted butter, melted
Mix all coconut crust ingredients together and press 1/2 of it into bottom of 8x8x2 pan. pour in filling; top with remaining coconut mixture. Bake in 400 degree oven for 25 minutes or until top is golden. Chill. Cut in squares to make 9 servings.

Holiday Gift Bread

1/2 cup butter, softened
1 cup sugar
2 eggs
1-1/2 t. vanilla
2 cups flour
1 t. baking soda
1/2 t. salt
1 cup mashed bananas
1 can (11oz.) mandarin oranges, drained
3/4 cup flaked coconut
3/4 chocolate chips
1/2 cup chopped or silvered nuts
1/4 cup each chopped red and green maraschino cherries
1/2 cup chopped dates
Cream butter and sugar in large bowl; add eggs and vanilla mixing well. Sift flour, baking soda and salt onto a sheet of wax paper. Add to creamed alternating with bananas, then mix in oranges, coconut, chocolate chips, 1/4 cup nuts, cherries and dates. Pour into two greased 8x4x2 inch loaf pans and sprinkle the rest of the nuts on top. Bake at 350 degrees for 50 minutes or until toothpick comes out clean. Cool 10 minutes before removing from pans.
